I finally gave up on my smoker and decided to get a new smoker. I went with a bigger model but less tech. Yes, its a cheater electric smoker. My 3rd one. I need more space to cook, I don't need help getting my smoke and temp right. :-)
I've also never used injection for flavor except for pork butt or other big cuts of meat. I decided to give it a try. I developed my own injection. Basically like the other recipes you have out on the internet but I'm putting the rub in the injection and using sirracchi.
Full results not in yet but my son and I think its the best sausage we have ever had.
No sauce. Marinated the meat overnight. Injected the meat. Slow cooked the ribs and chicken. Baste it with a combo of butter and apple juice. Using a combination of Apple, Mesquite, Cherry and Hickory wood.

Doing 2 more chickens as the SO carried some smaller birds home. These were 4.5lbs since 3.5 - 4lb birds don't seem to exist anymore. Over the weekend they were over 5 lbs easy.
I'm smoking the sirloin tip that was left over from the weekend (grilled 3 reserved one) and will sear it on my recently upgraded George Foerman grill that I have been hacking upgraded from on off to high low control for just searing. (it was $2.50 at Goodwill) and can handle 2 sammies on low or 2 steaks on incinerate setting. I will be reading surface temps later tonight but should be in the 600 degree area. [Reply]

ive had a Traeger for 4 yrs now, easiest way to do perfect bbq there is,

Weber Smokey Mountain. Just get the 18" model. You can find them on FB Marketplace or ebay, craigslist, etc for around $150. It'll last forever. I've had mine, although it's the larger model, now for over 12 years [Reply]
did a tri-tip this week, rubbed it with head country seasoning overnight and set Traeger
at 185 and left it alone till it hit 145 was the tenderest I ever had, wonderful bark and flavor was fantastic [Reply]
