½ cup quinoa rinsed
1 cup water
1 tsp rated ginger
½ tsp orange zest
¼ tsp lemon zest
¼ tsp salt
¼ crushed red pepper
( I crushed one of my dried Thai red chilis, because I was out of crushed red pepper)
2 Tbsp snipped fresh basil
Bring to boiling; reduce heat.
Simmer, covered, about 15 minutes or until liquid is absorbed. Stir in Basil.
I squirted a bit more juice from half a fresh orange and some lemon to taste, after the quinoa was cooked. I thought it need a bit more citrus flavor.
