These burrito bowls are becoming a bit of a regular Sunday thing for me as they're really easy to transition into a couple lunches during the week. The rice is a base, swap out a protein here, sub in a grilled veg there, or throw in a different sauce. Customize them enough not to burn yourself out and it's a good way to capture your food groups into one bowl/tupperware throughout the week. [Reply]

Okra turns slimy due to contact with oxygen, if you don't cut it open, it doesn't get slimy.
Try stir frying as larger chunks, placing whole okra on the grill or saute them whole. I brush them w/ oil and place on my panini grill and they come out slightly charred but not slimey.
If you don't like it that way, try stir frying after prepping using this method.
Cut them up like you do an onion, leaving the top on so that it holds the vegetable together while you make your incisions. Slice through the okra lengthwise up to the cap, leaving it intact. Rotate the okra not quite a quarter turn, then slice lengthwise again. If the okra is large enough, repeat once more. Kill the rice and use a fiber tortilla (low carb) and you have a great low carb meal. [Reply]
