Chicken Broth, Chicken, Meatballs, Escarole, Carrots, Celery and Onions with acini di pepe pasta ( "seeds of pepper" in English ). Added a dash of freshly shaved Parmigiano-Reggiano cheese on top.
I added the pasta on a per person basis, because I can't have it. I usually make it with my gluten free orzo but the supermarket stopped carrying it.
I threw together some chicken diced, onion, can of diced tomato, 1/2 bag of spinach, garlic, oregano, basil and serving over pasta. Don't know how it will be but it's "what's for dinner" [Reply]

Making my mom a cajun shrimp pasta dish for mother's day. I always use large shrimp and cook in the Cast Iron. I use Penne pasta and toss in olive oil and cajun seasoning.
I never know what kind of vegetables I should put in the dish? Green peppers, onions? Thanks. [Reply]

Green peppers and onion and some canned diced tomatoes ( but they need some garlic) . Organic ones have more flavor. Or you could use fresh diced. [Reply]
