I’m using 00 flour today. Never used it before, but it was very nice to work with when I was shaping the dough balls.

Good flour makes a big difference, I'm using King Arthur, yeast is proofing now.

Pizza, men!
Got this pic of the white pizza before I drizzled with aged balsamic.
The sausage is tasty, but the white pizza was really a winner. Loved that.

I'll take that as a compliment, and not creepy.
The white pizza was really good man. I smeared the bed of the crust with ricotta, sauteed mushrooms with fresh garlic, oregano, and chives, put a sprinkling of grated fontina and parmesan, and topped with mozzarella. Once it was cooked, a little balsamic glaze drizzle.
I have three more dough balls in the fridge; two are going to be par-cooked for later in the week, but tomorrow's lunch is another white pizza.
