Found a meat packer that sells brisket for $3.19 lb. hella cheaper than Dillons which is around $5.79 lb.

Switched it up EVER SO slightly this year.
Slathered the top of the corned beef with stone ground mustard and sprinkled just a bit of brown sugar over that, before the pressure cook.
Like meaty candy, really good to get a fork full of meat and carrot. The brown sugar and sweetness of the carrot, countered by the rich saltiness of the beef, with just a hint of tang from the mustard.
