I marinated two GIGANTIC boneless chicken breasts after I cut into large bit sized cubes, DD's for sure, in Lawry's Mediterranean Herb & White Wine Marinade with Lemon Juice & Garlic plus I added 1/2 cup of white wine and a little lime juice.
I'm going to stir fry the chicken, I have some potato and onion perogies for the starch, Asian medley Steamfresh veggies and a small salad of Italian blend with cherry tomotoes, radishes and some red onion with some lite balsamic dressing.
Crockpot carnitas
6# pork butt or shoulder
Run with 2 tsp salt, 1 tbsp pepper, 1 tbsp oregano 2 tbsp cumin
Jalapeno
Onion
4 cloves Garlic
1 cups o.j. or juice from 2 oranges
8hrs in crockpot on low
Pan fry to crisp, eat on flour tortillas with pickled red onion and cilantro [Reply]
Made some Korean lettuce cups with some ground pork and a kale, cabbage, and beet salad mix from Trader Joe's. All cooked down in a Korean cooking sauce and scooped into some bibb lettuce and eaten like a taco. I'm a fan of these salad combos from TJ's.
