Simple, homestyle goodness tonight... whole roasted chicken with halved red potatoes, quartered onions, quartered red, green and orange bell peppers, and halved tomatoes
The bird got a solid olive oil rubdown, then a very generous coating of a new spice blend I found called 'Brew Pub Chicken'
Its going super low and slow at 300 for 3+ hours or so, I want it falling off the bone, I'll cover it with foil about 2/3 the way through to keep it from drying out too much, but I want the skin well rendered
Plus, all of the chicken and veggie juices are going to make a sick gravy for the potatoes

I did that with some chicken breasts one time while I wasn't feeling so good. I thought a good meal would make me feel better.
I over seasoned them A LOT, didn't get a great texture on the bacon, and it turned out I wasn't feeling well because I had the stomach flu and tossed those bad boys back up.
While yours look a lot better than mine, I just can't bring myself to try those again. [Reply]

I brined these and have found that a thinner cut bacon with the straight fat pieces trimmed works better when smoking low.
That's sucks about the stomach flu. The wife got food poisoning recently from what we believe was a cored pineapple from the grocery store. She was bedridden for 3 days and it lingered for nearly 2 weeks. Just the smell of pineapple now makes her nauseous. Unfortunately for her, I love pineapple. [Reply]
It will be steaks on the Weber NG grill with my new cast iron grates. It had enamel coated steel grates which weren't to my liking. No heat retention and they sag after exposed to high heat. [Reply]
