I got home late so I patted a couple hamburgers and mixed in a bunch of shit the wife doesn't like. They fucking fell apart on the grill. :-)

I think there is a patty press in my future.

Skip the press and get a 4.5" ring mold. The presses are a PITA.

just started this, and it makes a nice burger. I used to use one of the ridged molds to prevent plumping.

I poke a small hole all the way through the burger, in the middle of the burger. They don't plump, and the expansion as it cooks closes the hole. I use the back end of a wooden spoon, so it's very small.
