Shit load of corn, some of it puréed with stock, cooked with potatoes, andouille, red bell, Cajun seasoning like Tony's. Add the shrimp at the end, then finish with some cream.

Pan sear or en papillote (sp?). It'll take whatever flavor you give it, so do something other than salt and pepper, otherwise it's pretty boring. [Reply]
