This method is possibly my new go-to for salmon. Short brine and then start skin-side down in a cold pan. Really excellent.

If anyone's interested, I can expound on the method.
Please expound on your method. The wife loves salmon and I'm always looking for other ways to prepare it.

It's ATK's method from their show a few weeks ago.

1 qt. Cold water
1/2 c. Kosher salt

Brine 5 oz. or 6 oz. filets for 15 minutes, then dry. The brine seasons it, but also keeps the salmon from leaking albumin as it cooks and keeps it moist.

In a cold skillet, sprinkle some salt and pepper and lay the fillets skin side down. Season top with salt and pepper.

Heat to medium-high and let cook without moving for 5-6 minutes or until the skin is brown and crispy and the bottom 1/4 inch or so is opaque.

Flip and cook for another 4-5 minutes. Target 125 degrees for farmed salmon or 120 for wild.

Plate skin side down and let rest for a few minutes covered.

ATK says skin side down, and it's their method. :-)

If you're eating the skin, I'd still go skin side up. Skin will stay crispy that way.

Tons of times. Not sure it makes much of a difference on the grill, but slow smoking seems to be the sweet spot for me.

I still prefer it pan fried in a cast iron pan.

Okay FMB I bought a bottle of Gates after hanging shit on you. That shit is horrible still. Gates BBQ would get its ass kicked by a McRib.... A fucking McRib. That's the last $3.99 Gates gets from me ever. Kraft regular is stellar compared to Gates. Rosie O'Donnell bleeding out would probably win in a blind taste test.
