I can and do buy take home kits from Kronos, but they're very skimpy with the skinny meat strips so I usually end up buying two kits... a large block of it that I could cut chunks from would be awesome
On a side note for anyone preparing wings today, I learned a secret to perfectly crispy skin online...get them as dry as possible before frying
Blot each one heavily with a wad of paper towels, then place on a plate in the fridge uncovered to air dry for 2-4 hours [Reply]

Yeah, water and crispy are sworn enemies. Whether it's frying things in oil, or getting the Maillard reaction in a skillet.
Crisping takes a lot of energy, and water absorbs a lot of energy. So basically, if you're leaving moisture on the surface, you might as well boil it. [Reply]

The younger son and I just got ribs on the smoker... The best news... All I had to do was stand there and be the process' clean hands, he did the rest on his own. From soaking the chunks, to cutting the ribs, I didn't have to speak a word..
It's going to be pricey, but the next cook-off competition for Scouts is going to be yummy... [Reply]
