Lasagne is a LOAD of work. Slo-Cooker for me 'cuz it's easy-peasy being mostly hands-off.

Crockpot French Dip is cooking away and should be ready around 6:30.

Got a 3 lb. chuck roast. Season with salt and pepper and sear in olive oil. One sliced onion in the hot pan, deglaze with about half cup of red wine. Let cook down until soft. Added a few cloves of garlic at the end. Added all that to the jus. The jus here is a can of beef broth, about 1/4 cup soy sauce, couple of splashes of worchestershire, bay leaf and 1/2 tsp of thyme. Smells great and the jus already tastes great. Should be even better in 6 hours.

French rolls and provolone to go with. Just doing some french fries for the side, nothing particularly interesting there.

Yeah, it's a good one that I never really think about. I was wanting to do some Italian beef in the crockpot, but the wife isn't a fan. She really likes french dip though, so it was an easy compromise.

I honestly wouldn't have thought to add red wine most times. But I bought a bottle last weekend in anticipation of the MOST TERRIBLE ICE STORM IN THE HISTORY OF THE WORLD - just to have plenty of drinking options on hand in case I was iced in. That was a real dud, and I never got around to drinking it. I saw a bunch of recipes online that were basically telling me to buy some canned french onion soup, dump it in and let that cook down for the jus. But I spent $17 on this goddamn chuck roast so I decided to go big.

So now I just have to drink the rest of this bottle of red wine this afternoon. I hope I'm up for the task.

anyone partake in apple cider vinegar'd cucumber and onions? i recall my mom making it as a kid, and it dawned on me having three large garden cucumbers.

had it with our cajun salmon and steamed asparagus/zucchini/button squash.
