Mixed vegetables are good too. I usually dash Tabasco atop.
Tonight I added a side of cheddar stuffed bacon wrapped jalapeņo peppers.

did a really nice stuffed zuchinni (beef mince, diced bacon, mushroom, corn and onion. cream of mushroom soup (thickened), cheese mix browned.)

I do taco beef, chorizo, and pablano tater tot casserole. Layer some cheese on top towards the end of the bake. Serve with some sour cream and salsa.
