My family likes to tweak recipes in order to find the combination that best suits the taste buds of all of us. In this case, piccata's a pretty basic recipe. We went with more butter and capers than usual, didn't rinse the brine off the capers, went with a bit more wine than usual and then reduced it to the same amount as normal, used tenderloins instead of the entire breast, used garlic and, didn't double batter the chicken. I almost prefer leftovers to day-of. I'm gonna make a Thanksgiving leftover pie. In a pie shell, bottom layer of stuffing, then turkey, gravy for sauce, covered with mashed potatoes like shepherd's pie. Bake off, brown the top, serve with more gravy (or cranberry sauce). [Reply]
I had my traditional leftover turkey sandwich for lunch. At the request of the Mrs and my visiting Niece, I'm making homemade chicken & dumplings for dinner [Reply]
Tonight I reheated three leftover mild italian sausages with sauce I had in the fridge and then made three sandwiches on Portuguese rolls with grated parm and a glass of Robert Mondavi Cab Sav.
OK, I know it's ugly, but it's GOOD. Thanksgiving leftover pie. Pie crust, bottom layer is stuffing, then turkey, topped with some gravy for sauce. Covered in mashed potatoes and cooked like shepherd's pie. Sauced with gravy.
Homemade tomato vegetable soup.
(It was frozen since summer and gotta use it up.)
Chicken breast sauteed in sesame oil garlic and onion.
A bowl of butternut squash.
Dessert was a beet smoothie, with frozen raspberries, half banana, half small apple and flax seeds sweetened with stevia. Nice n' sweet.
No pics. I was in a hurry and feelin' too lazy to get my camera. [Reply]
