Because it was never possessed by the receiving team. It's the same as a punted ball that isn't muffed.
I agree that there shouldn't be a benefit to the muffing team, but it was called correctly by the rules.

Apparently when the ball is rolling to a stop at the 1, the returner should just run in and knock it out of the back of the endzone.

I think if you try to do that intentionally it would be a safety.

if you're inside the 20 just knock it hard backwards instead of catching it.
