No chef here but it does add depth of flavor, any one ingredient can make or break a dish. Execution and timing is a big factor on why dishes can taste like crap. [Reply]

Cut up a red onion and soak them in vinegar. I just use a mason jar. Can't recall seeing them packaged for sale.
