Cast iron on the grill over medium heat. A bit of extra oil in the bottom. 10 minutes a side with medium thick chicken breasts. Salt and lemon pepper on the outside before placing on grill.

Typically. You vacuum seal the food in the bag, then cook in the sous vide. When ready to finish, re-season and sear it off.
They are supposedly washable and reusable. But 200 of them was like $14, so I just chalk that $.07 up to prep costs.

There's probably a more fitting thread for this, but we took the wife's corporate tix to the Bears game yesterday (wisely left at halftime). Anyway, we got invited to a tailgate and ol boy was churning out Italian beefs via a can cooker. I'd never really seen one in use before. He had his beef warmed in the can cooker with au jus and had a separate aluminum pan on a burner with hot peppers in au jus that you could also dip your sandwich. I didn't take a pic of the sandwiches because I didn't want to look like a buster, but they were some of the best I've had here and looked really easy to put together in a parking lot. I'm going pick one of these up and add Italian beefs into my tailgate portfolio.
Obviously nothing tops the Arrowhead tailgate experience, but I was failing impressed with Soldier Field's attempt. Especially for an aids infected team. [Reply]
