I'd do a few things different. First, I'd go fewer potatoes, more carrots. Add a bay leaf or two. Onions and garlic should be sauteed, not straight into the slow cooker. It also needs more water, probably 3 c. total.

Oh it does something. Adding any flavor that can be distinguished past the smoke is another. It does help retain moisture. I have tried all kinds of beer, soda, purees and water on beer can chicken. i have done on many occasions a smoked salmon on smoker, with pork rub. it fan fucking tastic :-) [Reply]
