It was pretty good for my first time. I will substitute the white wine out, even though that wasn't what caught my attention. The Cognac was the bread winner and completes the dish. This is a must have while making the bisque. I forgot to add pepper, I'm glad I didn't because it would show and I don't have white pepper. Nothing worse then to see pepper in nice played dishes. That's an eye sore for me. [Reply]
