What I did after the first one was bit underdone. I brought the meat up to room temp (whatever on that), put it in the oven as it preheated, went 5 min long on the cook time and let rest for 10 min.
I saw a taco recipe using this I might try.
Buy the unseasoned ones, run some season salt and pepper and grill over indirect heat. I obliterated those in college when pork was cheap. I had people convinced I could actually cook. BAAAHAHHAHAHAHAHHA [Reply]

I don't know that my wife has had a pork chop in 14 years since she's been with me. I don't like them, she's never asked for them. Fuck me if she didn't grab some and mention that we hadn't had them in a long time. Heh. Longer than you think I thought. I told her I wasn't a fan and she asked if I could cook some for her. Boom. I lose. I told her I would if she would allow me to make a garlic cream sauce to go over them, and she agreed. So voila! Tonight's dinner.
Center cut pork chops in a garlic cream sauce with some mashed taters. I was shocked. I enjoyed it thoroughly.
