i never used to either, but used one of these at my sisters and liked how it kept them from shrinking up, so I stuck with it. I handform if I sous vide them.

I'm just screwing around. But I do prefer to use my hands; the molds pack the meat too tight. It's the same reason I don't like the patties from the store. I prefer a looser pack for a tenderer burger.

No, it's the 3-day refrigerator rose dough. And no, fresh mushrooms.

It's the one I posted a couple pages ago for someone. It's the best dough recipe I've ever used. Great flavor.

I'll find it again and post it. The sauce in the recipe is great, too.
