We are heading to a friend's house in North Phoenix tomorrow. Looks like the Total Wine off the 101 has a few bottles left in stock. Might stop by and get the last few. Thanks!

I would guess that you'd want to wait until next spring or summer when they distro a fresh batch. Generally you want IPAs/DIPAs as fresh as possible, and definitely less than 2 to months old.

Did not know that. I'm not a huge beer drinker.

With something like bourbon (my favorite) opening the bottle and letting it sit for long periods can actually further enhance the taste.

I doubt I'd notice on this beer! LOL

And the same is true with beer! Many folks age Bourbon Barrel beers.

The deal with IPAs/DIPAs is that they're high in hops and those hops go stale fairly quickly. The aroma and flavor deteriorates drastically in a short amount of time compared to other beers.

That's why most craft guys don't like when breweries don't date their bottles/cans. If they're being sold in a store that doesn't get a lot of traffic, you might be buying a bottle that's six months old and have no clue.

Shit....you are absolutely right. I don't know why I had it in my head that it's a DIPA. I've not tried it, I just remember seeing it in stores a while back.

As mentioned, I was lucky enough to receive a bottle of Bloom by Parish from TimBone. I popped it last night. My shitty condo lighting doesn't do the appearance justice, but it's a beautiful opaque light orange. Aroma was bursting with citrus and tropical juice. Soft, juicy™ mouthfeel that lingers. Taste was a nice balance of tropical hops and malt sweetness that finished with a touch of piney bitterness. Fantastic beer that was a real treat to drink.

Not sure if Gulf Coast IPAs are a thing, but of the Parish pales/ipas TimBone has been generous enough to share with me, they seem to capture the right balance between the juicy flavor and soft mouthfeel of New England and the bitterness of the West Coast without the viscous booziness of a lot of Midwest IPAs (FFF, Pipeworks).

I couldn't find a lot of info on Bloom and would be interested to know the yeast strain used.

I tried 6 different beers the other night at the place by our house. Two sours that were really good and one milk stout that was really good....made by Founders I think?
