It has tilapia, scallops, and shrimp along with grape tomatoes, red onions, cilantro, marinated in lime and lemon juice served with lightly toasted tortilla quarters.
I love ceviche. I make it with shrimp and crappie all the time. I add cucumber, garlic, tomato, onion. I only use lime juice to "cook" it though.
For those that don't know, there is no right or wrong way to make ceviche. It's a very regional dish. Some use orange juice/lemon juice, some lime juice. Some put tomato juice in it, some don't. I love it and make large batches of it, as it gets better over several days in the fridge. [Reply]
Love me some pork tenderloin and the accompanying dishes look great as well. Had grilled pork chops that were brined last night and they were incredibly moist. Also a cold grilled corn relish, mashed red skins, and broccolini. [Reply]
Guess I will include my meal I cooked tuesday although no pics because it ran over later than i expected had hungry grouchy kids. I cooked spatchcocked mustard roasted chicken in cast iron skillet. Turned out moist juicy and delicious they kids approved. I watched Jacques Pepin on his pbs show last weekend seen him do this and it looked easy. Only thing is he used a oven safe non stick coated skillet that I did not have. I remedied this as a ordered from Bon Ton a 12" non stick coated steel All Clad skillet for 50 bucks. The cast iron did not render the juice in pan for the sauce like his did I roasted to 165 internal at 450 oven. He said about 30 minutes mine took all of 50 cleanup of that pan was a bitch but worth it. All I can figure is the cast iron was so hot it continued to brown it but did not burn but cooked down.
