I grabbed an ATK book on pressure cooking. Gonna be putting that bad boy to work for something other than stock. There's several things in this book that sound tasty.

I'm a cookbook junkie, even though I don't usually cook from them. I read them like novels, it's weird. I also bought a few I think my wife will use. She doesn't mind slow cooker and easy recipes, so I got a couple slow cooker books - one specifically with easy prep - and one that limits ingredients to 6.

Should be fun.

Saute 1/2 onion in 2 T butter till soft.
Add 1 cup dry white wine and cook over high heat until reduced by half.
Add 2 cups Arborio rice, 1 t salt and 1/4 t pepper. Stir.
Immediately add 2 cups of of the preheated stock.
Cook risotto by the normal technique, keeping the rice at a simmer, stirring constantly, and adding stock one ladle at a time as needed to keep a slurry consistency. This goes on for about 20 minutes. The rice is done when it is al dente.

Stir in the mushroom mixture. Stir in 3/4 cup of your very best fresh-grated Parmesan cheese. Serve with more cheese on top and fresh ground pepper.

So, so good.
Have you ever done risotto in the pressure cooker? It works well, I've been really surprised. Much lower maintenance than the traditional risotto method.

That looks good! Honey crisps are bloody expensive these days. Roughly twice the cost of all other apples.

what i have is half a 3 day marinated jerk chicken, 11 pounds of 81/19 ground beef not yet frozen, 3 ears fresh corn, jasmin rice, 1 egg, a 7lb ham cured picnic shoulder, not yet frozen, 1 lb 41/50 frozen shrimp, yeast roll breading, cream cheese, 2 fresh green peppers, 4lbs onion, cumin, tumeric, chipotle, hot mustard powder, japanese pepper, mirin, 1 lime and 1 lemon, romaine lettuce, 3 bananas,

any recipes?
