What kind of mushrooms? I'm a big fan of just sautéing in butter with some onion or shallot and garlic. Add some herbs and Worcestershire sauce, finish with a squeeze of lemon.

If they're big, maybe stuff them? You could always fry in a tempura batter. Slice thin for a raw salad? Roast them and put them in risotto? Good mushrooms are awesome with browned butter and pasta and fresh sage.
