Carne Adovada (New Mexico style pork)

Inspired by this same dish at a place called Dick's Hideaway here in PHX which might be the best plate of New Mexican food I've had. Highly recommended if in the area

Sloppy plating by me but I was starving by the time I sat down with it

Yep. New Mexico and Hatch chiles are pretty much the same. Hatch is a specific region which holds the chile festival so it gets the name recognition but they're mostly synonymous. Pasilla and guajillo would be fine substitutions for dried New Mexico chiles

I followed the Serious Eats recipe pretty closely except transferred to the smoker to braise instead of stove top. Gives it more smoky flavor

Standard KC dry rib rub.

4 lbs or 4 racks of Baby Back Pork Ribs
1/2 cup brown sugar
1/4 cup paprika
1 tbsp black pepper
1 tbsp salt
1 tbsp Chili Powder
3/4 tbsp garlic powder
1 tbsp minced onion
1 tsp cayenne pepper
