Carne Adovada (New Mexico style pork)

Inspired by this same dish at a place called Dick's Hideaway here in PHX which might be the best plate of New Mexican food I've had. Highly recommended if in the area

Sloppy plating by me but I was starving by the time I sat down with it

That’s a winner! Does the New Mexico style imply use of hatch chiles?

Yep. New Mexico and Hatch chiles are pretty much the same. Hatch is a specific region which holds the chile festival so it gets the name recognition but they're mostly synonymous. Pasilla and guajillo would be fine substitutions for dried New Mexico chiles

I followed the Serious Eats recipe pretty closely except transferred to the smoker to braise instead of stove top. Gives it more smoky flavor

The Dick's Hideaway version

Spoiler!

I’m a big fan of Cowtown’s The Squel for anything pork

Can usually find it if you’re in the Hyvee footprint
