Lunch/early dinner: at Fate's again to have a lunchbox burger. One of the top 5 burgers, maybe top 3 of my life. Have it often.

Buttered and toasted Brioche bun, peanut butter spread, fig jam, two slices of juicy bacon slice of cheese. Just incredible flavor. Jad with a bowl of rice and a King Sized Candy Bar beer.

Heading home for nap.

Fuck Google. You have to go where the Mexicans eat, and I don't think most of them vote for anything on google. In PHX it's easy, just go to the nearest Home Depot and drive around until you find the shittiest looking mexican joint in the neighborhood. If it's anywhere near lunchtime, and the parking lot is jammed, you're in the right place.

Its a cool, rainy day here and I have the perfect cure for it, especially since I have a case of the sniffles... chicken pot pie soup

Rotisserie chicken plucked and chopped
Diced taters
Chicken broth
Cream
Butter
Peas
Carrots
Fresh mushrooms
Garlic
Fresh cracked pepper
Thyme
Rosemary

So easy a monkey could make it, just throw it all in the crockpot and let it do its thing... the smells wafting around right now are insane

I did have some fantastic tacos 2 days later after meeting up with a mate and complaining at how mid those tacos were. She took me to a place called Los Tacos No.1 and they were all delicious, especially the one to the far right which was pork shaved from meat that was grilling on a kebab spit.

Thank you, they were indeed awesome... I'm learning the "hot and fast" (325 degrees) for about 1.5-1.75 hours (spritzing occasionally), then wrapped for about 35-45 minutes with butter and sauce, then 10 minutes on the grill at ~400.

I know it sounds too simple to be true, but it's freaking amazing...

Do they pick up much smoke that way? I’ve always been under the impression smoke flavor is picked up at the beginning of the process when temps are low.

What do you wrap with? I use butchers paper and lard softened in the smoker.

I've always thought Google reviews were pretty accurate if there's a large enough sample size... anything ~4.5+, I'll read the most recent reviews just for any red flags and filter out any dumbass "nOtHinG hAd AnY fLaVor" 1 stars. If nothing else, it's a green light to look at a menu and food pics, but don't usually regret choosing them.

Places in a ~4.2-4.4 range tend to be less predictable in my experience... some are those hole in the wall gems and others just aren't good at all.

And if you can't hit at least a 4.0, it's probably only worthy of a road trip or late night stop if there's really nothing better available.
