Started buying/eating flat iron steaks maybe 20 years ago? Back then you could get a 2-lb. flat iron for maybe $6? Pretty versatile piece of meat, with decent flavor and tenderness if you don't overcook it. Sometimes there's a long piece of gristle running through it though. I usually try to find a way to remove it before cooking if I can. [Reply]
