That sauce was the All Pro of that sammich, followed closely by that quality crusty on the outside, chewy inside bread... you seriously cannot get anything like it in this little town

Got this piece of tenderloin on sale yesterday, and had this recipe for these super crispy roast potatoes, so this became NYE dinner for me and mom. That's my filet, a perfect med. rare on the rare side, grilled in cast iron with ghee, topped with Stilton blue cheese (also on sale at Fry's), my mom's grilled asparagus with almonds and garlic, and those super crispy roast potatoes not cooked in goose fat.
Well, parts of them anyway. Forgot to take a pic until after I'd eaten most of it.
I had this shitshow rodeo all fucking day, so I made this.
Yesterday in anticipation, I smoked a chuck roast (took it to 180) and subbed it for one of the pounds of hamburger in the wife's recipe. Also roasted a couple pablanos.
Both are winners. I think more smoked chuck and less hamburger is on the docket next time. Every bite with the smoked chuck was fucking amazing.
I haven't roasted pablanos in awhile, because I'm a moron. They're good on fucking everything. I think next time, I'm roasting a couple seeded jalapenos and a red bell pepper. I think the roasted peppers add a lot of texture and depth to the chili. [Reply]
