Brutal week here so I phoned it in, doctored up a Red Baron 4 meat with mushrooms, onion and peppers

Yeah, it'll get the job done around 11 or so

Pasta soup

Brown some hot Italian sausage - remove from pot
Add Mirepoix - cook down
Wine deglaze
Add Tomato paste
Add Garlic paste
Add Chicken broth
Add Red pepper flake
Add Gnocchi
Add Spinach
Add the sausage back in
Splash of heavy cream
Top with crispy prosciutto and parm reggiano
Serve with crusty bread

It's like a mash up of different Italian items to make a hybrid soup. Pretty interesting. Never saw anything like that back East.

Yeah it’s not a real recipe but more of a fridge clear out kind of dish on an overcast day.

How do you do your mirepoix? Mom used to prepare it in butter, and it always seemed like, since it's an Italian dish, that olive oil would have been the standard.
