Started a new batch of pizza dough. It will ferment in the fridge for several days to develop flavor. Best dough ever.

I know that I’m late to the 2020 party, but I’ve been exploring the world of sourdough with nothing but sticks of butter to defend myself. It’s a grand adventure.

Out fucking STANDING!!! I avoid bread as a general rule, but that bread looks to be within the "OK" zone...

Chicken Curry. Good heat and spice level, no coconut milk.

Looks good man. I need to get properly educated on curry. I think I had it once at a mall. It was shit. I need to do better.

I do mine in a clay cooking pot, but you could stir fry or use a regular stew pot. Stir fry will uphold the texture and flavor of the individual ingredients, while the stew pots will give you a more developed but more blended flavor and broken down texture. Both good, but different.

Chicken thighs is my choice for meat.

Choose whatever vegetables you like. I used onions, bell peppers of all colors, carrots and celery.

For spices I used fresh garlic, fresh ginger, a fresh jalapeño, curry powder, garam marsala, red pepper flakes and salt. About 5:1 ratio on CP to GM is what I used. All of these are to taste.

For the gravy, I used chicken broth and flour. For stew versions I coat the chicken with a mixture of flour, CP, GM, and salt, then add chicken broth to the stew pot. For stir fry, I would blend the flour and chicken broth before dumping on the cooked stir fry. Coconut milk is classic.

I finished with my favorite ugami cheater: coco aminos.

Served mine on brown rice.

While this looks amazing, it also looks like that creature that comes out of the dog in The Thing.

I had a 20 oz Rib Eye on the bone at The Keg Steakhouse in Tempe Marketplace and it was a homerun! Cooked perfect, tender, closer to 24 oz., very little fat.

Had a baked potato with butter and charred creamed corn with green chilies.

Started with baked shrimp app and toasted brie with pepper jelly and crostini.

Two Voodoo Ranger IPA beers and a glass of Quilt Cab Sav

The damage for me attached.

Sounds well worth it.
