Yeah man, I go about 40-45 mins @ 250F or 145F internal with a chunk of wood. Gives it an additional layer of flavor and a nice crust.

Finally got out of the field for a minute.

Did some smash burgers.

Not the best execution, they were trying to stick to the spatula when I smashed them. I think I should have had them in the fridge after I made the balls. That and the wife didn’t tell me we had no buns, but I got a good toast on the bread…errr toast.

The roasted pablanos are the cheat code here. Goddamn they’re good.

I like to toss some sugar on my strawberries, it makes them nice and syrupy. Brings out all the natural flavors.
