veggies - Idaho spuds, carrot, Vidalia onion
herbs/spice - fresh garlic, rosemary sprigs, salt, pepper
liquid - water with 'Better than Bullion,' Balsamic
The roast was marbled, so I went with BtB instead of bone broth because I needed the flavor, not the fat or collagen.
I put just a smidge of horseradish across the beef itself as it was cooking to tenderize and get the flavor into the meat itself as it cooked. . . Then I scooped some on top at the end. The horseradish and balsamic work well together, not too spicy, not too vinegary, just a little sweet. [Reply]
Scrounged together some decent white trash/trashcan funeral potatoes inspired hash browns.
Cubed spuds [about the size of small sugar cube], sliced onion, tossed with panko, Durkee fried onion, fried jalapeno, garlic salt, parmesan. Put it in a grill dish so it browns all around, drizzle with olive oil so it browns well. . . Air fry 20 minutes. . . top with shredded cheddar and sour cream.
Serve with ham steak glazed with maple syrup and fried egg with some ghost pepper sauce on top. Black coffee, and my new indulgence, Uncle Matt's OJ. [Reply]
