As always, our time at the farm was awesome. We go to hunt, but every time we go we get to do to do things that are fun. We go to drive this bad boy this time. It was cool. I'm sure they laugh at us, it's deserved I guess, but they love it when I setup their Wi-Fi and fix their tech, so it's a win-win.

The son and I tried-out the new grinder tonight. It did very well grinding the venison, the blending-in some pork sausage. Hardly as industrial a unit as we use at the farm, but we wanted to (finally) use one of my Christmas presents from last year.

Any chance of posting a base recipe for that? Not asking for all your secrets, just a basic recipe.

For sure, its fairly simple.

Sauté sausage (I like spicy Italian here but any quality ground sausage will work) and chopped chicken in butter

Add chicken stock with bouillon cubes (can use water instead of stock here as well)

Add in both cream style corn and fresh/frozen corn (grilled corn gives it a nice smokiness)

Add in green chiles (again fire roasted is preferred but canned works as well)

Add cumin, S&P, and any other preferred spices to taste

Add monterey jack cheese and heavy cream ~10 minutes before serving

Splash liberally with your favorite hot sauce

Garnish with cilantro (green onion works here as well)

When you see an Astro van at the carwash and a line for the tamale stand out front, you have to stop, right?

Unfortunately they were sold out of pork so I went with chicken verde and queso jalapeno, with a Mexican hot chocolate (champurrado). Fried egg and hot sauce supplied by me.

Outstanding, my little town finally got a taco truck and he does tamales as well... think I'll do that for lunch before the game tomorrow

Have only had the carne asada and pastor tacos so far, but I'm sure the tamales are just as legit... dude barely speaks English but his food is highly authentic

Tonight I'm doing a fish fry with some catfish a buddy caught and gave me, with mustard potato salad and sliced onion... just not quite ready to let go of summer yet
