I didn't buy whatever liquid he uses, just spashed in a little soy sauce and a little worchestshire sauce. I did use all his veggies (including green onions) and the breadcrumbs and all that, and it was really good. I'd recommend following it pretty closely before going and doing other things. Might just be his palate. Your palate changes as you age. Or usually anyway, from what I've read.
Kind of like when i was a kid and I hated my mom's Thanksgiving green bean casserole. Then sometime around my 14th or 15th birthday I suddenly decided i really liked it. The green beans just tasted better somehow. She didn't change anything.
I'd just keep making the version that you think is the best one, and by the time he's 15 he'll probably like it.

Are you make scratch mole or buying canned enchilada sauce? This gal makes a quick mole for chicken enchiladas I have used and like well because its fast. I have used dried ancho chilli peppers or Hatch if you can find them. The hardest thing for me was finding the Mexican chocolate. Only difference is I bake them with cheeses of my choice.
A really good one takes a bit more time Is the blond Gal who runs the Americas test kitchen. I cant find the video now but I posted it here before just dont know the thread.
