Inspired by this same dish at a place called Dick's Hideaway here in PHX which might be the best plate of New Mexican food I've had. Highly recommended if in the area

Yep. New Mexico and Hatch chiles are pretty much the same. Hatch is a specific region which holds the chile festival so it gets the name recognition but they're mostly synonymous. Pasilla and guajillo would be fine substitutions for dried New Mexico chiles
I followed the Serious Eats recipe pretty closely except transferred to the smoker to braise instead of stove top. Gives it more smoky flavor
